Food Options On The Rise At Randhurst

Chipotle, Possibly 1-2 Others Pegged For Empty Egg Factory Site

By RICHARD MAYER Assistant Managing Editor

Casto Lifestyle Properties, the company in charge of transforming Mt. Prospect's Randhurst Mall into a new retail/entertainment center, awarded a contract to renovate and expand the vacant Egg Factory restaurant building at Kensington and Elmhurst roads.

According to James Conroy, director of development for Casto, a 2,400 sq. ft. addition will be constructed to accommodate a Chipotle Mexican Grill restaurant. The project will also renovate the existing 6,900 sq. ft. building into four smaller retail/restaurant spaces.

Work was expected to begin the week of Memorial Day.

The exterior of the building will be completely renovated with a new brick facade.

"The entire expansion/renovation will require approximately 3-4 months to complete at which point the tenants will come in and complete their interior work," said Conroy.

In addition to Chipotle, Director of Community Development for the Village of Mt. Prospect Bill Cooney said east coast fast food chain Five Guys Burgers and Fries will be moving in, in addition to a T-Mobile phone shop. The fourth tenant has not been decided as of yet.

Molly Catalano, director of communications and public relations for the Five Guys chain, said nothing is official until a lease is signed.

According to Alexandra Trask, spokesperson for T-Mobile, the cell phone company is expected to locate at 116 Kensington Rd.

"Realistically, we are looking at a fall occupancy for some of these businesses," said Cooney. He added that revenues vary, but from a typical restaurant, the village is expected to see anywhere between $20,000-$25,000 in annual sales tax revenues.

The owner of Egg Factory recently closed up shop after purchasing a new location in East Dundee.
